Water Kefir Soda Recipe
If you're new to fermented foods, water kefir is the perfect place to start. It’s incredibly easy to make, and the best part? It doesn’t even taste fermented! It’s a refreshing, naturally fizzy beverage that even my husband loves – and trust me, that’s saying something.
I’ve made water kefir a few times now, and I’ve learned that the quality of the kefir grains really matters. They’re the secret ingredient that turns simple sugar water into a delicious, probiotic-packed drink. My most recent batch was made using kefir grains from Cultures for Health, and I have to say, they produced the most amazing, bubbly kefir I’ve ever made. I highly recommend them!
When you order the grains, they arrive dehydrated. You simply soak them in sugar water for a couple of days to rehydrate, and then you're good to go.
Water Kefir Soda Recipe
Ingredients:
1/2 cup water kefir grains
1/4 cup organic sugar
4 cups water
Instructions:
Hydrate the Grains: Once your grains are rehydrated, you’re ready to make the kefir! In a jar, dissolve 1/4 cup of organic sugar in 4 cups of water.
First Fermentation: Cover the jar with a coffee filter and secure it with a rubber band. Leave it on the counter for 48 hours to ferment.
Strain the Grains: After 48 hours, strain the grains from the liquid using a fine mesh strainer. You can now add fruit or juice to the liquid for flavor!
Second Fermentation: Pour the flavored liquid into airtight bottles or jars and leave them on the counter for another 24 to 48 hours. This second fermentation is when the kefir gets its signature fizziness.
Refrigerate: After the second ferment, place your bottles in the fridge, and it’s ready to drink!
My Favorite Flavors
My son’s all-time favorite is lemonade kefir water. After straining out the grains, I add 4-6 tablespoons of fresh lemon juice to the kefir liquid, bottle it up, and let it ferment for another day. It's so refreshing, and I love knowing it’s packed with healthy probiotics!
We’ve also gotten a bit more adventurous with flavors. Recently, we made a raspberry apple ginger kefir soda. I added about 1/4 cup of fresh raspberries, the juice from two small apples, and a couple of thin slices of fresh ginger to the second ferment. The result was absolutely delicious and packed with a unique, tangy flavor!
